Might Car Mods guys did something similiar, they took the H6 engine, put it in a legacy then put a single big turbo on it! Pretty epic build!

Pretty sure that's what Andy forrest's & Simon Roe's are built around

The thing the 3 litr Outback needs most is a turbo to get the fuel efficiency down a little and to give it that kick up the ar$e.

How big a job is it?

Quite substantial, new ecu, custom engine loom, custom headers to up pipe, downpipe, throttle bodies, boost control, turbo, downpipe, cooling Inc intercooler, fueling, injectors and opening the engine up to get right compression ratios with piston crowns an gasket thickness for a start. Missed loads out I reckon

You'd be better off building one from scratch, ground up
