Welcome to the club. I'd highly recommend Duncan Graham @racedynamix. He mapped my car and done a brilliant job and I hear nothing but praise for him from other members. He is mainly based at Surrey rolling road but it is well worth the travel. I see you are in Greenwich, we have a couple of members local to you and we hold a monthly meet in greenhithe near Bluewater. As for power, with the mods you have I'd suggest you change to a 3 port boost solenoid (if it's UK) and upgrade the fuel pump. Just for safety. What fuel do you run on? If you use high octane like momentum 99 you will have a higher chance of good figures. Lastly, with a TD04 turbo and your set up you'll make 270-280 if it has a TD05 you could see up to 320. Sat for 5 years with no mot or movement is a larger risk than usual. Tyres could perish, oil and coolant would need changing. Fuel left in pipes would start to deteriorate. Gaskets will go brittle and sudden pressure would likely upset those. Belts will suffer too so they'd need changing. On top of that it's a classic non turbo so the market is miniscule as is. Scrap price is ridiculously low for cars at the minute. With all these risks before even viewing you'd be hard pushed to get any real value. Nobody is here to upset you or have you feel unwelcome but I'm sure you'd rather the honesty than people lie to you and get your hopes up. [emoji5]

Oil type
A filters a filter. If you're just using standard oil and it's a basic engine or slightly modified there's no need for a flashy filter. I bought my air filter, oil filter and fuel filter from icp and it cost £12.50. Can't argue with that value.

Have a look on Opieoils.co.UK they often have sales and discount codes. Importcarparts.co.uk are also top of my list for Subaru service parts and certain types of oil. All genuine parts at really good prices.

Remapping
Had mine done by Duncan at Surrey rolling road too. Nothing but praise for the bloke. I'm sure he's always busy and bombarded with the same questions but he had plenty of time to answer me and he even visited me at home for a little tweak. Main thing to consider between dyno and road mapping is the car/engine will be under different loads. Air resistance, road resistance, inclines will all have different effects compared to a dynos rollers. It'll still be mapped safely because he can monitor detonation and boost, you just won't get a dyno printout with a power figure.

Boost cut/fuel cut by the sounds of it if it's as you come on boost. Could be quite a few issues causing it. First step would be a edu code check. There is a guide on the forum explaining how to do it on classics. I'll find the link and post it.

Tyre Size on classic - Winter options
If you can get the total wheel/tyre diameter and circumference the same as what it currently is then the Speedo will remain the same. From what I can remember there are a couple of websites that offer a calculation to sort it without too much brain ache. The difference between 205/50 and 205/55 is 10.25mm. If the speedo reads 30mph the 205/55 would be going 31.01mph and at 70mph you'd be doing 72.34mph. Not enough to get in trouble but certainly something to consider. Hope this helps [emoji4]

They tried to charge the difference? Can't see why they did that to you but sent out the competition clutch for same price to other guy.

I heard about the dodgy batch of exedy clutches. That link I posted a few weeks back from Aztec, a local member bought an exedy from them but Aztec refused to send him a pink box because of the amount of returns they had for faulty pressure plates. They honoured the price and sent him a higher spec clutch kit.
