Nice one - good luck with the sale

SBF FUSE
Is it not covered in the manual? With that size you are looking at something that draws a fair bit of current. If it was me I would pull it then try starting the car

What have you done to your Subaru today ?
nightmare - doesn't rain but pours... It may not apply to your policy but check the amount of windscreen claims you can have before any NCD is impacted - know someone who got caught out with that before had x2 in 2 years came to renew and discovered the NCD had been lost. Been paranoid about it myself since.

Ultimate Fuel is it worht using or not.
Yes - that is what I ran my STI on and you could tell a difference, I think the chap who had it before us was running it on 95 ron, halfway through the first full tank of vPower and it showed, better throttle response as well as improved mpg

Mapping
This should fit your motor - got the ESL chip already fitted which would save some money, then all you need is the map https://www.gumtree.com/p/car-tuning-styling/subaru-v1-v2-z4-ecu-with-esl-installed/1166766727

Cobb Tuning Cat Back Exhaust Stainless Steel
hmmmm - wonder if it would fit on an 08 rx - will def need a new rear bumper though

Hesitation issue
Wotcha and welcome - sounds like something is cutting your fuel supply to avoid damage - check the engine codes and see what is there as it may be a sensor triggering it. VVT wouldn't have been my first area to check.

Coil pack
Both work great for standard cars, tuned versions running higher boost run better with the stick coils. Yes you can change if you would like - in fact there is a member current trying to sort an issue with his motor that may require a stick coil conversion - he has just purchased new coils and leads so may be up for a trade??

Mapping
none of those reasons should cause the map to "disappear" from the ECU - In the same way your computer doesn't forget how to start up when you disconnect it from the mains the info is loaded onto a hardwired chip - hence the risk involved moving a remapped ECU onto your own car with different modifications, the changes from standard will still be there if you have a standard ECU with nothing attached ie Apxei or HKS piggy back type kit it will almost certainly be on a standard map. ESL (as Stants mentioned) will modify your actual ECU and enable real time mapping through the use of appropriate cable and software.

Diesel additive anyone?
Use it in my merc van - was using BG stuff for a while, worked great then I stopped when my supplier moved, 18 months in and limp mode was there every trip. Am now using Nitro+ or BP alternative plus a lucas additive, it is almost back to normal. Think the Merc will be cycling more crud than your newer XV but I would do it at least once a year if using branded fuel throughout the rest of the year. Will be trying the Torco product as well in future
