depends on the model as a widetrack blob STI would handle and stop better than a hawk wrx

Engine Repairing...
if you are going as far as removing the head get them skimmed before replacement but also check pistons and liners whilst you are digging but to be honest if you are going as far as removing the engine and the heads I would do a full strip down and rebuild checking rings bearings, crank etc but that is just me as you will have done most of the work removing the heads its not much more to split the cases

Spark plug changing - how easy and cost?
seems a little high that, it can be a bit fiddly and we have had members wind the socket out into the side of the wheel well swear profusely and have to wind them back in. I dont know how good with a spanner you are but it is a straight forward job

looking good - tidy car, just the bumper to address really, those rims look in really good shape. I wouldnt worry about a remap best spend teh money on a good service - oil plugs filter etc maybe getting the injectors cleaned

its the rear diff and you are correct it should not be leaking

front caliper change and brake bleeding
I follow a slightly different order as I was advised brakes are liked diagonally to stop the car from spinning I do ns front os rear then os front ns rear. the main thing is do all of them and keep an eye on your reservoir so you dont suck air in to the system again ;)
