You can get newage sti scoops that have the same footprint as classics can't remember the company name I'll have a look, think they are based in Hyde

At a guess I'd say it's been removed to make way for a cold air feed, there's either a cone in the wing or a custom made box. It's Most efficient place for the filter to get nice air from. I can't see the maf housing anywhere I take it has been mapped out ?

As long as it's for ally blocks and is an etholyneglycol based coolant you should be fine, don't mix them though. If your needing to top up I'd look at just using a bit of distilled water as it shouldn't effect it
