Turning 20 in March, wanting a classic Impreza wagon before 2022. Insurance Costs?
Similar conversations with my lad - may suggestion was to track the more powerful car and have a more age friendly motor to build up no claims and get him around.

Help Needed About Catalytic Converter
my 2p I would replace the exhaust with a turbo back stainless steel option, include a sports cat and have a system that will last you for as long as you have the car. I have purchased cobra systems for x3 different cars now, never been disappointed. https://cobrasport.com/collections/subaru-impreza-exhaust/model_wrx-sti-turbo-2001-07

2nd Service
Depends where you are - TDR Warwick do servicing as well as tuning, Area 52 Notts, Sheffield Subaru Services I had a quick look at the service schedule for your motor and it looks like you are down for a transmission fluid replacement. That oil will cause an increase over a standard engine oil and filter change. I spent £250 on transmission oil alone from OPIE to do mine myself

Noisy tyres! 🤯
Are your tyres oversize?

Hawkeye
Wotcha and welcome - I dont think the bumpers are too hard to fit on imprezas in general, it helps to have a second pair of hands when presenting the bumper to the car to avoid dropping and damage

Hello All
Wotcha and welcome - it does seem like someone has made a change - probably when the SLS failed. Have a look at the Pedders solution as it is designed to replace the SLS so should give you the correct height https://pedders.co.uk/info-subaru-forester

2018 Impreza any good?
I have not driven one but my 2008 N/A auto was ok to drive but did hold onto the revs when you were driving, I often used the semi auto option to change the gears myself or to hold it on a gear if I was negotiating a set of roundabouts

Project light restore/tidy up of a UK classic turbo
I tend to sit an idle for a bit after a drive do tend to cruise the last few miles as well - learnt the hard way years ago with a 200sx that had an oil supply line routed around the engine as a consequence (even with me sitting for a while after a drive) oil crystallised in the line restricting flow and killing the turbos

Water damage
I would want to know how the water got to it in the first place? Where it is located it shouldn't sit in water unless water is at least 3cm deep in the foot well of the car
